ABSTRACT

Objetivo: descrever a adequação de práticas alimentares às recomendações do Guia alimentar para a população brasileira e analisar fatores sociodemográficos associados, entre adultos. Métodos: estudo transversal, com amostra de conveniência de 900 adultos (18-60 anos) residentes no território brasileiro; uma escala de práticas alimentares (24 itens; escore 0-72), baseada nas recomendações do Guia, foi aplicada por meio de um painel on-line; análises de regressão linear múltipla foram empregadas. Resultados: os participantes do estudo tinham, em média, 33,5 anos; 52,2% eram mulheres; o escore médio na escala foi de 36,4 pontos (DP=8,5), e mostrou-se diretamente associado à idade (p tendência linear <0,001), e maior entre indivíduos residentes nas regiões Norte-Nordeste (37,8) comparados aos das regiões Centro-Sul (35,8) (p T-teste=0,001). Conclusão: a adequação das práticas alimentares às recomendações do Guia esteve diretamente associada à idade, e foi maior entre indivíduos das regiões Norte e Nordeste do país.


Objetivo: describir la adecuación de las prácticas alimentarias a la 'Guía alimentaria para la población brasileña' y analizar la asociación con variables sociodemográficas entre adultos brasileños. Métodos: se aplicó una escala (24 ítems; score 0-72) basada en las recomendaciones de la Guía a una muestra por conveniencia de 900 adultos que viven en territorio brasileño (panel online); también se obtuvieron datos de género, lugar de residencia, nivel socioeconómico y edad; se efectuaron los análisis estadísticos con regresión lineal múltiple. Resultados: la edad promedio de los participantes fue de 33,5 años; el 52,0% era mujeres; el score promedio fue de 36,4 (SD=8,5); la puntuación se asoció directamente con la edad (p tendencia lineal <0,001) y fue mayor entre las personas del Norte-Nordeste (37,8) que entre las del Centro-Sur (35,8) del país (p T-test=0,001). Conclusión: la adecuación de las prácticas alimentarias a la Guía fue asociada a la edad y a la región de residencia de los individuos.


Objective: to describe the adequacy of dietary practices in relation to the Dietary guidelines for the brazilian population, and to analyze associated factors among Brazilian adults. Methods: this was a cross-sectional study using a convenience sample of 900 adults (18-60 years old) resident in Brazil; a dietary practices scale (24 items; score 0-72) based on the Guideline recommendations was administered using an online panel; multiple linear regression analysis was used. Results: participants' mean age was 33.5 years and 52.0% of them were women; the mean score on the scale was 36.4 points (SD=8.5); scores were directly associated with age (linear trend p<0.001), and were higher among people from the North-Northeast regions (37.8), compared to those from the Midwest-Southern regions (35.8) (T-test p=0.001). Conclusion: the adequacy of dietary practices in keeping with Guideline recommendations was associated with age and region of residence.

ABSTRACT

Basándonos en una consulta de una niña que desea realizar una dieta vegetariana se realizó una búsqueda bibliográfica para identificar evidencia sobre el impacto de este tipo de dieta en la salud. La evidencia actual indica que la dieta vegetariana es una opción saludable que no produciría un impacto negativo en el crecimiento y desarrollo de los niños, si bien existiría la posibilidad de déficit de micronutrientes. Based on a consultation of a girl who wishes to make a vegetarian diet, a literature search was conducted to identify evidence on the impact of this type of diet on health. Current evidence indicates that the vegetarian diet is a healthy option that would not have a negative impact on the growth and development of children, although there is a possibility of micronutrient deficits. RESUMEN Introducción: Según la alta incidencia de desnutrición en el país, se realizan estudios que evidencian un bajo rendimiento físico y mental en el niño, relacionado a una inadecuada merienda escolar. Objetivo: Evaluar la composición de la merienda escolar y los factores determinantes. Métodos: Estudio descriptivo de corte transversal correlacional, realizado en preescolares de 10 centros de educación inicial de la provincia de Santa Elena, en 2017. El universo quedó constituido por 785 niños, con una muestra de 150 binomios padres/preescolares. Se utilizó el método observacional y la encuesta aplicada, las variables estudiadas fueron: edad de los padres, sexo, nivel de instrucción, peso y talla (evaluadas según las Tablas de Valoración Nutricional de la Organización Mundial de la Salud), alimentos incluidos en la merienda y capacitación sobre alimentación saludable. En el análisis de los datos se utilizó el software SPSSS versión 21 y las medidas de tendencia central, de dispersión e intervalos de confianza. Resultados: El 84,44 por ciento de los padres incorporan alimentos saludables, 81,14 por ciento entre 21 a 25 años de edad. En la escuela "Carmen Montenegro" suministran en la merienda escolar alimentos saludables a diferencia del centro de educación "Luz Esmeralda Valdivia" en la cual añaden alimentos de bajo nivel proteico y donde 58,73 por ciento manifestó no haber recibido capacitación sobre alimentación saludable. Conclusión: Los alimentos más incorporados en la merienda escolar fueron: frutas, lácteos, legumbres y jugos naturales; y los menos añadidos fueron: dulces, jugos envasados, gaseosas y snacks(AU)


ABSTRACT Introduction: With respect to the high incidence of malnutrition in the country, studies are being carried out that show a low physical and mental performance in the child, associated with inadequate school snack. Objective: To evaluate the composition of the school snack and the determining factors. Methods: A descriptive, correlation, cross-sectional study was carried out in preschools children from 10 education centers in Santa Elena Province, in 2017. The study population was made up of 785 children, with a sample of 150 parent/ preschool binomials. The observational method and the applied survey were used, the variables studied were age of the parents, sex, level of instruction, weight and height (evaluated according to the Nutritional Assessment Tables of the World Health Organization), foods included in the snack, and training on healthy eating. The software SPSS v. 21 and the measures of central tendency, dispersion and confidence intervals were used in the data analysis. Results: 84.44 percent of the parents incorporate healthy foods, 81.14 percent between 21 and 25 years of age. At Carmen Montenegro School, they provide healthy food in the school snack, unlike Luz Esmeralda Valdivia Education Center, in which they add low-protein foods and where 58.73 percent said that they had not received training on healthy eating. Conclusion: The most incorporated foods in the school snack were fruits, dairy products, legumes, and natural juices; while the least added were sweets, packaged juices, soda, and snacks(AU)

ABSTRACT

OBJETIVO: Comparar a aplicabilidade do questionário do guia alimentar "Como ter uma alimentação saudável" (QGAS), proposto em 2006 pelo Ministério da Saúde, e do questionário de alimentação saudável da Pesquisa Nacional de Saúde (PNS) de 2013 com relação à qualidade da dieta em longevos (85 anos ou mais) avaliados por uma equipe multiprofissional. MÉTODO: Estudo descritivo, quantitativo, transversal e analítico, em que foram avaliados em domicílio 44 longevos participantes de um projeto multiprofissional de atenção ao idoso, realizado na cidade de Porto Alegre, Rio Grande do Sul, Brasil. Os hábitos alimentares foram avaliados a partir de dois questionários de investigação de hábitos alimentares, aplicados por entrevistadores nutricionistas e demais profissionais da área da saúde. Os itens alimentares constantes na PNS foram pontuados a partir de uma adaptação da pontuação proposta no QGAS para fins de comparação entre eles. RESULTADOS: O questionário da PNS foi mais fácil de ser aplicado por profissional não nutricionista, sendo significativamente relacionado ao QGAS com um coeficiente de correlação (r2) de 0,67. Quanto à avaliação da dieta, as mulheres apresentam melhor qualidade da dieta no QGAS (10 dos 18 itens avaliados), enquanto no instrumento da PNS os homens apresentaram mais itens saudáveis (8 dos 15 itens avaliados). CONCLUSÃO: O questionário da PNS apresentou boa correlação com o QGAS na avaliação da qualidade da dieta em nonagenários e centenários.


OBJECTIVE: To compare the applicability of the 2006 Brazilian Ministry of Health food guide questionnaire Como ter uma alimentação saudável (QGAS ­ How to have a healthy diet) and the 2013 National Health Survey healthy eating questionnaire (QA-PNS) for determining quality of life among the oldest-old (85 years and older). METHODS: This descriptive, quantitative, cross-sectional and analytical study included 44 oldest-old participants from a multi-professional care project (AMPAL) in Porto Alegre, Rio Grande do Sul, Brazil, who were evaluated at home. Eating habits were assessed using two questionnaires applied by nutritionists and other health professionals. The QA-PNS score was adapted to the QGAS score to facilitate comparison. RESULTS: Applying the QA-PNS was easier for non-nutritionists and was significantly related to the QGAS, with a correlation coefficient (r2) of 0.67. The women's diet quality was better according to the QGAS (10 out of 18 items evaluated), but the men's was better according to the QA-PNS (8 out of 15 items evaluated). CONCLUSION: There was good correlation between the QA-PNS and QGAS questionnaires for evaluating diet quality in the oldest-old.

Introducción: la adolescencia es considerada una etapa compleja no solo por los cambios que ocurren en el organismo desde todos los puntos de vista, sino por la complejidad que presupone el manejo psicológico de la misma, de esta forma también influye, lo relacionado con su hábitos alimenticios. Objetivo: describir el comportamiento de las aversiones alimentarias en 94 adolescentes, de la escuela Secundaria Básica "José Martí". Materiales y Métodos: se realizó un estudio descriptivo transversal, con 94 adolescentes de la escuela Secundaria Básica "José Martí" del municipio Cerro, que cursaban el 7mo grado, cuyas edades oscilaron de 11 a 15 años de edad, durante el período de septiembre a octubre del 2015. Resultados: los grupos de alimentos más detestados fueron los vegetales y las frutas. El pescado a pesar de su importancia nutricional fue el alimento más rechazado y el menos consumido. Las viandas, las legumbres, los cereales, las carnes blancas, el huevo y los lácteos fueron los grupos de alimentos por los que menos aversión mostraron. Continúa siendo un factor de riesgo para la población adolescente, la ingestión de dulces y azúcares por ser uno de los alimentos preferidos y de mayor consumo. Conclusiones: las aversiones alimentarias detectadas sitúan a este grupo atareo en una situación vulnerable desde el punto de vista nutricional, y ratifica que los alimentos con mayores valores nutricionales son los menos aborrecidos, a pesar de las consecuencias actuales y futuras que pueden generar en su salud, así como el incremento de la incidencia de enfermedades relacionadas con los hábitos dietéticos (AU).


Introduction: the adolescence is considered a complex stage not only because of the changes occurring in the organism from all the points of view, but also due to the complexness of its psychological management. Eating habits belong to this field. Objetive: to describe the behavior of food aversions in 94 teenagers of the Junior High School "José Martí." Materials and Methods: a cross-sectional, descriptive study was carried out during the period September-October 2015, with 97 7th-grade students of the Junior High school "José Martí", municipality Cerro, whose age ranged from 11 to 15 years. Results: the most detested food groups were vegetables and fruits. Fish, in spite of its nutritional importance, was the most rejected food and the less consumed one. Vegetables, legumes, cereals, white meats, eggs and dairy products are the food groups for which they showed less aversion. It is still a risk factor for the adolescent population the consumption of sweets and sugar because they are their preferable food and the ones they consume the most. Conclusions: the detected food aversions locate this age group in a vulnerable situation from the nutritional point of view, and ratifies foods with higher nutritional values are the less detested ones, in spite of the current and future consequences that could generate in their health, and also indicates the raise of the incidence of diseases related with dietary habits (AU).

ABSTRACT

El tema de salud es una línea de investigación, propuesta en la Agenda Nacional de Investigación del Viceministerio de Ciencia y Tecnología. Bajo esa dirección se ha realizado esta investigación, con el interés de proporcionar otras alternativas a los menús que se sirven en los centros escolares a través del "Programa de Alimentación y Salud Escolar", programa que pertenece a la actual política educativa Plan Social Educativo "Vamos a la Escuela"; como su nombre hace referencia esta política tiene un enfoque social, el cual se rige con la línea de equidad, acceso y permanencia al sistema educativo. La vinculación de la alimentación con el programa de huertos escolares permite enriquecer el menú que se sirve de refrigerio en cada uno de los centros educativos, además del beneficio que obtienen las madres colaboradoras, responsables de elaborar los alimentos a través de capacitaciones en la manipulación higiénica y técnicas para hacer los alimentos, considerando las propiedades nutricionales en beneficio de los estudiantes. Con el estudio realizado y los datos recopilados se hacen algunas conclusiones y recomendaciones para los diferentes sectores educativos, y de esta manera hacemos un aporte para que con lo investigado se mejore la aplicación del programa en las instituciones educativas.


The health issue is a line of research, proposed in the National Research Agenda of the Salvadoran Vice Ministry of Science and Technology. Under that direction, this research has been carried out, with the interest of providing other alternatives to the menus that are served in schools through the "School Food and Health Program", a program that belongs to the current educational policy Social Educational Plan " Go to school"; As its name refers to, this policy has a social focus, which is governed by the line of equity, access and permanence in the educational system. The link between food and the school garden program allows enriching the menu that is served as a snack in each of the educational centers, in addition to the benefit obtained by collaborating mothers, responsible for preparing food through training in hygienic handling and techniques for making food, considering the nutritional properties for the benefit of the students. With the study carried out and the data collected, some conclusions and recommendations are made for the different educational sectors, and in this way we make a contribution so that with the research the application of the program in educational institutions is improved.

Objetivo Identificar y describir los hábitos alimentarios de los estudiantes de tres universidades de Bogotá y los factores que influyen en su adopción. Métodos Se realizaron tres grupos focales con participación promedio de 12 estudiantes de diferentes carreras de pregrado con edades entre 18 y 25 años. El contenido de los relatos fue analizado y categorizado de acuerdo a los factores que influyen en la selección de alimentos y los hábitos de alimentación. Resultados Los estudiantes señalan los factores sensoriales y de higiene, el costo de los alimentos, la disponibilidad de los mismos y el tiempo disponible para comer como principales factores que influyen en la selección. Se identifica además la influencia de los amigos y la familia, entre otros, en las elecciones en este aspecto. Los estudiantes participantes refirieron preferir la comida de su casa, consumir la mayor parte de sus comidas en el hogar y tener horarios de alimentación marcados por las actividades académicas. Conclusión Aunque los estudiantes tienen conocimientos acerca de lo que es bueno para ellos en términos de alimentación, en la vida universitaria la organización de las jornadas académicas, la disponibilidad de alimentos y de recursos económicos marcan de manera importante los hábitos y elecciones que realizan. Las estrategias de promoción de hábitos saludables en las universidades deberían entonces privilegiar el control de tales barreras.(AU)


Objective To identify and describe eating habits of students from three universities in Bogota and factors influencing their adoption. Methods: Three focus groups were formed with an average attendance of 12 students from different undergraduate programs, between the ages of 18 and 25. The content of the accounts was analyzed and categorized according to the factors influencing the selection of food and eating habits. Results Students identified sensory and hygiene factors, the cost of food, the availability of food and available time to eat as the main factors influencing food selection. We also identified the influence of friends and family, among others, in their choices. Students who participated reported to prefer food from home, eating most of their meals at home and having eating schedules influenced by academic activities. Conclusion Although students have knowledge about what is good for them in terms of food, in university life, the organization of academic schedule, food availability and economic resources show significant influence on their habits and choices. Strategies to promote healthy habits in universities should then prioritize the control of such barriers.(AU)

ABSTRACT

A nivel mundial, el impacto de las enfermedades crónicas no trasmisibles que pueden ser prevenidas está creciendo de forma sostenida y representan la causa de defunción más importante, con un 63% del número total de muertes anuales. En todo el mundo las enfermedades cardiovasculares ocupan el primer lugar de las muertes por enfermedades crónicas, seguidas del cáncer, las enfermedades respiratorias y la diabetes. Venezuela no escapa de esta realidad, ya que dentro de los cinco principales motivos de muerte en la población, cuatro están relacionados con enfermedades crónicas no trasmisibles: Enfermedades del corazón como primera causa, seguida de muertes ocurridas por diversos tipos de Cáncer y Enfermedades Cerebrovasculares que ocupa el tercer lugar, pero no menos importante las cifras de muertes registradas por Diabetes que ocupan el quinto lugar. Estas enfermedades comparten cuatro factores de riesgo: mala alimentación, inactividad física, el consumo de tabaco y el uso nocivo del alcohol. Es evidente que el llamado a realizar cambios en el estilo de vida es una prioridad en el tema de salud mundial. Es hora de crear conciencia, fundamentando valores sociales y responsabilidades públicas que orienten a desarrollar estrategias y conductas que permitan preservar la salud y mejorar la calidad de vida. Una vida saludable es la base de una sociedad sana, que garantiza a sus individuos gozar plenamente sus años de vida. En base a estos cambios, ha surgido la idea de aportar una lista de pasos, que sirvan como herramienta a la sociedad en general, para poner en práctica conductas saludables, para asegurarse, en un gran porcentaje, una mejor y mayor longevidad: una nutrición adecuada, una actividad física apropiada, evitar hábitos nocivos y tener una buena actitud ante la vida, son sin duda las mejore cualidades para lograr una vida saludable(AU)


Globally, the impacts of chronic non transmissible diseases that can be prevented is growing steadily and are the leading cause of death, representing 63% of all annual deaths. Worldwide cardiovascular diseases rank first in deaths from chronic disease, followed by cancer, respiratory diseases and diabetes. Venezuela does not escape this reality, where four out of five main reasons of death within the population, are related to chronic non transmissible diseases: Heart disease is the leading cause, followed by deaths from various types of cancer and cerebrovascular diseases. Deaths caused by diabetes rank fifth. These diseases share four risk factors: poor nutrition, physical inactivity, smoking and alcohol abusement. The importance of making changes in our lifestyle is a priority for global health. It’s time to raise awareness through social values and public responsibilities to guide and develop strategies and behaviors which preserve health and improve quality of life. Healthy living is the key for a healthy society, which guarantees its individuals to fully enjoy their life. Based on these changes, there has been pointed out a list of steps that can be used to practice healthy behaviors and ensure a better and longer life: proper nutrition, appropriate physical activity, avoid harmful habits and have a good life attitude, are certainly better qualities for a healthy life(AU)

Introdução: Distantes dos centros urbanos, as indústrias incorporam a alimentação como um dos pilares do controle sobre o seu processo produtivo, transformando práticas até então resultantes de escolhas pessoais em práticas subordinadas às suas diretrizes. É na esteira dessas transformações que analisar a nutrição na sua relação com o trabalho e a saúde constitui-se numa vertente fértil para a compreensão de diversos problemas de saúde do trabalhador Objetivos: O presente trabalho tem por objetivo evidenciar a Política de Produção como uma estrutura relevante para a construção de uma complexa teia de processos que conformam o padrão alimentar de um segmento operário e seus problemas de saúde associados à alimentação. Material e métodos: Fundamentado na técnica do estudo de caso, o trabalho desenvolve-se numa fábrica do Polo Petroquímico de Camaçari, privilegiando uma abordagem centrada na experiência vivida pelos trabalhadores. Nesse sentido, coloca-se sob a perspectiva das relações sociais, organizando-se em torno das dimensões geral, particular e singular, de modo a elucidar dinâmicas que, situadas em diferentes níveis, articulam-se aos processos de produção e reprodução do padrão alimentar e dos problemas de saúde. Para a coleta de dados, foram utilizados como instrumentos uma entrevista semiestruturada, um questionário autoaplicável, além de uma ficha para registro dos problemas de saúde associados à alimentação. Resultados: Os resultados, problematizados à luz dos diferentes espaços explicativos, evidenciam os processos mais gerais do contexto fabril, passando pelos processos modeladores do padrão alimentar, até as formas de percepção e conduta em face desses problemas. Conclusão: Conclui com uma discussão sobre o conflito vivido pelo grupo em relação ao modelo de cuidado implementado pela fábrica, às estratégias de superação dos processos que reproduzem seu padrão alimentar e os problemas de saúde a ele associados.


Introduction: Distant from urban centers, industries incorporate food as one of the pillars of control over their production process, transforming practices hitherto resulting from personal choices into practices subordinate to their guidelines. It is in the wake of these transformations that analyzing nutrition in its relationship with work and health is a fertile ground for understanding various health problems of the worker. Objectives: The objective of this paper is to show that the Production Policy is a relevant structure to build a complex net of processes which configure the dietary patterns of a working segment and its health problems associated with diet. Materials and methods: Based on the case study technique, the work was developed at a factory in the Petrochemical Complex of Camaçari, focusing on an approach centered on the workers' experience. In this way, it is centered on the perspective of social relations, organized around the general, particular and unique dimensions, so as to elucidate dynamics which, located at different levels, articulate to the processes of production and reproduction of dietary patterns and health problems. To collect the data, the instruments were a semi-structured interview, a self-administered questionnaire, and a card to register the health problems associated with diet. Results: The results, problematized in the light of different explanatory spaces, show the more general processes in the factory environment, the modeling processes of dietary patterns, and also the ways these problems are perceived and faced. Conclusion: The paper ends with a discussion about the conflict experienced by the group in relation to the model of care implemented by the factory, and the strategies to overcome the processes which reproduce the dietary patterns and the health problems associated with them.
